Money Saving Mom's 4 Weeks to Fill Your Freezer Challenge Day 4: Chocolate Chip Pumpkin Bread

 One of my favorite things to make. I knew I was going to have to double the batter if there was hope of any making it to the freezer!

 Christian helped cracked the eggs.....he has not reached Chef status yet but is getting better. I just have to breathe in and breathe out when I see him crack the eggs and all the shell pieces fall into the batter.....I tell myself that this training stage will soon pay off and in a couple of years he will be making me all sorts of goodies with no assistance needed =)

 We used  2 glass pyrex bread pans and my pampered Chef mini loaf maker. I am still mad at the Pampered Chef pizza stone for making my oven dirty yesterday!


 It was a nice evening tonight and so all the neighbors were outside and I couldn't help but offer all of them some chocolate chip pumpkin bread. One of our neighbors also cut our grass....before I gave him the pumpkin bread so I wasn't bribing him...lol.


 I think the breads look like mommy and baby next to each other..... =)

Out of 6 loaves only 1 is making it into the freezer!

Chocolate chip pumpkin bread sounds delicious! I may have to try this one out.

I also find it very difficult when preparing baked goods for the freezer to actually get very much of it in the freezer. Everyone wants to taste test and before you know it half of what you have made is gone. :)

I personally just try to make more knowing that a portion will never make its way to the freezer. :)

I am not a kitchen expert, but I do cook at home daily. For the record I never crack an egg directly into the bowl. I use a mug or small cereal bowl on the side. Then you simply dump content into mixing bowl. If egg shells happen to fall in they are much simpler to "dish" out.

Amber that is the hardest part of baking sweets! I liked knowing that some of it "had" to make it in the freezer, so I didn't eat it all =)
Thanks for the tip on the extra bowl....I am pretty new to the kitchen I was raised on Rtamen noodles and fruit loops...lol. Then I fed my family budget gourmet frozen dinners until a few years ago I researched the importance of food =)
